Nature’s Freebies

Vanilla apple cake, Recipe, Baking, NigellaAutumn is definitely here and although I’m a little late to the party, there is still plenty of time to go outside and forage for apples and blackberries and get baking.

In the country park, where we take our puppy Dilys, there are plenty of blackberries still to be had. We have been gathering some up each time and freezing them to keep us in crumbles throughout October. As for the apples, apple tree owners have been very generous and leaving “help yourself” boxes on garden walls for me to fill my pockets from.

With just a few cheap items in my cupboard, I’ve got myself a crumble in very little time and four happy tummies around the dinner table. If you are not someone to have flour and castor sugar in the cupboard, you can pick up a bag of ready made crumble for pence.

I also made an apple sponge which was amazingly delicious. I used this recipe: Nigella.com’s vanilla apple sponge. As if it was fate, the following day a flyer came home with my son from school advertising a local apple festival and inviting entries for the apple cake and pie competition.

I baked in a flurry of flour and high expectations. I chopped the neighbour’s apples and imagined how an apple cake competition winner would style their hair. In hindsight, this distraction could have been my downfall. The first two cakes were inedible and the third tasted great but didn’t survive removal from the tin. I didn’t go to the apple festival. I sat at home sulking, stuffing my face with vanilla and apple flavoured failure.

Mmmmmmmmmmm.

    We have made Damson Gin & Damson Liqueuer from our foraging. And LOTS of apple things (trifle, loaf, crumble, pie, applesauce…)
