#3 – A Bad Run
(Quick Quesadillas & Moussaka)
First up, sorry I’m late. I handed in a sick note with the HoB Guard Dog and he let me off – the house had flu and no-one was really eating anything to be honest.
Nasty bugs all shaken off, we have had a go at a couple of recipes from the Ella’s Kitchen Red Recipe Book although not with much success.
Firstly I made Quick Quesadillas using some leftover chicken from our Sunday roast. Ridiculously simple, quick and not in the slightest bit messy, this was another recipe that us grown ups loved and both Smalls rejected after a single forced down bite.
I will definitely be cooking them again to use up leftovers for an easy lunchtime meal for Caius and I, even if the kids won’t eat them.
The second recipe I made is rather hopefully titled ‘Mmmmoussaka’ and was an awful lot of effort for an awful lot of rejection – even I didn’t like it.
It was supposed to be lamb mince but as I don’t like lamb and the Smalls reject anything but pork mince nine times out of ten so I swapped it for pork instead. I fried off the mince with onion and some mashed sweet potato then left it to cool.
Whilst that was cooling I griddled some aubergine and courgette slices and par-boiled some sliced potato.
All that done, I layered it into a baking dish like a lasagne, using the slices of vegetables instead of pasta.
Instead of making a béchamel, this recipe simply involved stirring cheese into crème fraîche and putting this over the top layer of vegetables. Then you just sprinkled cheese over the top and baked it in the oven until it was golden and bubbling.
It smelled lovely and looked good too but I am afraid that it didn’t live up to my hopes. My face was incredibly similar to Tori & Arthur’s in this case, although Caius said it was lovely and ate pretty much all of it for his next three meals so it can’t have been that bad!
All in all not a particularly good show of new recipes and I was feeling fairly down about it after a couple of tiring weeks. HOWEVER – today I had a bit of a success. Over on my blog I am part of the Great Bloggers Bake Off and today this lead me to making yeasted bread from scratch for the first time in my life. I decided to make a garlic, cheese and smoked sausage tear & share-style loaf and to my amazement not only did it turn out pretty nicely but BOTH of the Smalls loved it and demolished it with their pasta at dinner time. (They also ate their pasta for a change, too!)
Hooray! All is not lost!
