Quick Recipe: Simple Marinade

Fancy a quick and easy way of making dinner more interesting? In the heat, I spend the whole time craving light meals- generally salad and grilled meat. The main culprits include salmon or chicken, but salmon and chicken tends to get pretty boring. So I have put together a super-quick marinade to makes things more interesting. The marinade can cover three or four small chicken breasts or salmon fillets. Just leave for at least a couple of hours for the best flavour.

Simple marinade

You will need:

  • Knife
  • Tablespoon
  • Bowl
  • Cling film
  • Over-proof dish

Ingredients:

  • 1 large orange
  • 1 tbsp wholegrain mustard
  • 1 tbsp runny honey

How to make it:

Cut the orange and juice it in to the bowl. Then add the tablespoon of mustard and tablespoon of honey. Stir until well-combined.

In an oven-proof dish, place your chosen meat and cover it with the marinade- turn it a couple of times to make sure it‘s well-covered.

Cover with cling film, pop in the fridge and leave for a couple of hours (although I have been known to leave the salmon for only about 20 minutes).

When you’re ready, pop the meat in the oven and cook as normal, making sure to turn it every now and then and use a spoon to pour the marinade over.

With chicken, I have even put it on a hot griddle, turning it to make sure it doesn’t stick. You can pretty much use the marinade on anything you fancy, and cook it up how you like too! It makes for a fresh, summery taste with the citrus zing of the orange and the warmer depths of the wholegrain mustard and honey. Never suffer from boring old chicken again…
