Food of the Month: Scallops

Sometimes you’ve just got to splash out. And this month is your last chance to chow down on some yummy in-season scallops! This recipe is a divine choice from Jamie‘s 15 Minute Meals. But there are loads of scallop recipes out there to find- the trick is always in the cooking. Scallops can either be perfect, or a rubbery mess. Try some pan-fried scallops with lime and coriander for a simple introduction to cooking them, or branch out in to ceviche to really impress. For the more exotic of dishes, try Richard Corrigan’s seared scallops with salsify, blood orange and brown shrimp or Delia Smith’s scallops Veronique as a sumptuous dinner party starter.

But in the meantime, let’s take a look at Jamie’s dead-simple recipe! And at just 441 calories per portion, it’s dead healthy too.

Golden scallops with sun-blush mash and greens – serves 4

You will need:

  • Shallow, lidded casserole pan
  • Medium pan
  • Food processor
  • Frying pan

Ingredients:

  • 4 rashers smoked streaky bacon
  • 12 large scallops (or, if you’re like me, a handful of small scallops per person)
  • Olive oil
  • 20 fresh sage leaves
  • Half a lemon

For the sun-blush mash

  • 800g potatoes
  • 40g cheddar cheese
  • 70g jarred sun-dried tomatoes in oil
  • Splash of milk (optional)

Vegetables

  • 200g tenderstem broccoli
  • 200g asparagus spears
  • 200g frozen peas
  • 1 tbsp extra virgin olive oil
  • Half a lemon

How to do it:

Slice the potatoes 1cm thick, put into the casserole pan with a pinch of salt, then cover with boiling water and the lid.

Refill and boil the kettle. Trim the ends off the broccoli and asparagus and put both vegetables in the medium pan with the peas, cover with boiling water and cook for 3 minutes. Drain, toss with the extra virgin olive oil and the juice of the half lemon, and put in to a serving bowl.

Crumble the cheese into the food processor, add the sun-dried tomatoes and half a tablespoon of the oil from the tomato jar, and blitz.

Finely slice the bacon, pat the scallops dry with kitchen paper, then score on one side in deep crisscrosses and season with salt and pepper.

Drop one tablespoon of 0live oil in to the (hot) frying pan and add the scallops, scored-side-down. Cook until lightly golden on both sides (this is where you keep a close eye!), add the bacon and the sage leaves.

Drain your potatoes, tip in to the processor and pulse (try to get the balance between oozy and sticky – add the milk if you‘re worried).

Squeeze the lemon over the scallops, toss in the pan, and serve up.

This is a refreshing, zingy meal that’s just perfect for hazy August evenings. Scallops (if cooked right) are super impressive to serve up, so make sure you have this one up your sleeve if you’re ever called up for Come Dine with Me. The fresh tomato-flavoured mash makes for a nice change and you know I love asparagus (though I tend to avoid the peas – bleugh!)
