Cocktail Bar: Raspberry Mojito

I am desperately clinging on to summer, which means my cocktails are super-summery right now. So grab the last of the summer raspberries and whip up this delicious raspberry mojito – if you sit under the outdoor heater you can pretend you’re in 30°C heat!

You will need:

  • Highball/mason jar
  • Long-handled spoon
  • Pestle of a pestle and mortar

  • 6 fresh mint leaves, plus a sprig to serve
  • 4 fresh raspberries, plus extra to serve
  • 20ml freshly squeezed lime juice
  • 1 tsp sugar syrup
  • 1 tbsp black raspberry liqueur
  • 35ml golden rum
  • Splash of ginger ale

How to make it:

Place the mint leaves and raspberries in to the glass, muddle briefly (crush slightly so the mint and raspberries release their flavour) and add ice. Over the top, pour in the lime juice, sugar syrup, black raspberry liqueur and golden rum. Stir well with the long handled spoon. Top up with ginger ale, then garnish with the mint sprig and raspberry.

This is sharp and refreshing, with the familiar mojito kick. If you’re not a fan of mint, add only half the leaves, because it does have a minty finish after the heat of the rum and the sharpness of the raspberries and ginger ale. I love a good mojito though (if you ever get to Wahaca, you HAVE to order the hibiscus mojito), and this raspberry flavoured one is perfect for the last of the sun.
