We’re stepping away from raspberries this week, but still clinging to summer with its fresh tastes – this time it’s lemons. Grab some limoncello and mix up some Leland palmers.

You will need:

  • Mason jar
  • Bowl

  • 20ml honey
  • 20ml hot water
  • 120ml brewed jasmine tea
  • 30ml gin
  • 30ml limoncello
  • 30ml fresh lemon juice
  • 20ml grapefruit juice
  • Club soda to top up
  • Lemon slice to garnish

How to make it:

Mix the honey and hot water together until the honey dissolves and leave to cool completely. Add the honey water with the jasmine tea, gin, limoncello, lemon juice and grapefruit juices and stir well. Add to the mason jar over ice, then top up with soda. This is a deeply refreshing drink, with the gorgeous sweetness of honey following the sharpness of the lemon. If you want the same gradient colour that I have, simply don’t stir at the end.
