Food of the Month: Celeriac

This unseasonable super-mild weather has me all turned-about; I should be eating stews and lots of autumnal comfort food, and yet it’s still mild enough to be eating fresh salads and light dinners. So to make that transition, I have found the perfect vegetable; the celeriac. This rich, autumnal root vegetable is still light enough to eat in mild weather, and makes a good alternative to parsnip or potato.

Simply mash it up for a light side dish (try it with potato and pear to serve with pork), or roast it as an alternative to parsnip. It’s also amazing in soup (try celeriac, pancetta and thyme for a rich, smoky flavour). But my ultimate, favourite way to serve celeriac is as a nice, crispy chip… Try chargrilled steak and sweet garlic celeriac chips with roast button mushrooms and red wine jus for the poshest-sounding, simplest meal you’ll ever make! Just because it sounds like a posh restaurant, doesn’t mean you need a Michelin star to cook it…

Chargrilled steak and sweet garlic celeriac chips with roast button mushrooms and red wine jus – serves 1

You will need:

  • Griddle
  • Roasting tray
  • Frying pan

Ingredients:

  • 125g rump steak
  • Olive oil
  • Salt and pepper
  • ½ celeriac, peeled and cut in to thin wedges
  • 3 crushed garlic cloves
  • 15g butter
  • 5 chestnut mushrooms
  • 100ml red wine

How to do it:

Preheat the oven to 180C.

Brush the steak with olive oil and salt and pepper, then heat the griddle until smoking, and griddle the steak for 2-3 minutes on either side (a bit longer if you dont like it rare. Then remove from the pan and rest on a warm plate.

On a baking tray, drizzle olive oil over your celeriac chips and season. Scatter over the crushed garlic and roast in the oven for 12-15 minutes, or until golden-brown and crisp.

In your oven proof frying pan, melt the butter and fry the mushrooms whole for 2 minutes until lightly golden. Pop in the oven for another 8-10 minutes until golden brown all over.

In your steak pan, pour in your red wine to deglaze and reduce for about 4 minutes (until the liquid has reduced by about half).

Serve the steak with a drizzle of the jus, with the chips and mushrooms and enjoy!

Serve it up with some greens if you need – try my current obsession, tenderstem broccoli and asparagus, or a crisp green salad. This makes a delicious alternative to standard chips, and if you’re not a fan of steak, try serving it up with a stew instead of mashed potato.
