Cocktail Bar: Blackberry Thyme Sparkler

Another festive sparkler! This time we’re upgrading ourselves from soda water to the good stuff: champagne. Ideal for all those Christmas parties you’re attending and hosting, the blackberry thyme sparkler is a sweet-and-sharp champagne cocktail with a delicious fizz.

You will need:

  • Saucepan
  • Champagne glasses
  • Blackberries and thyme sprig to garnish

  • 30ml blackberry simple syrup*
  • 30ml gin
  • Champagne to top up

How to make it:

Pour your gin in to the champagne glass, then pop in a couple of blackberries. Next pour over your blackberry simple syrup. Top up with champagne, garnish with a sprig of thyme, and serve!

Not only does it look impressive, but it tastes pretty dang good too. Make up a load of the simple syrup the night before and serve on Christmas morning as an alternative to buck’s fizz.

*Make the blackberry simple syrup by combining equal amounts sugar, water and blackberries and boiling until the blackberries are soft and the syrup is a bright red/pink.
