Cocktail Bar: Pimm’s Blackberry Spice

Less fizz this week, this time I’m mixing up a simple, spiced cocktail that’s perfect for sipping after singing all those Christmas carols. This week, try the Pimm’s blackberry spice.

You will need:

  • Highball glass
  • Crushed ice
  • Mint leaves and cinnamon stick to garnish

Ingredients:

  • 50ml Pimm’s Blackberry & Elderflower
  • 10ml vanilla syrup
  • 6 mint leaves
  • Pinch of cinnamon

How to make it:

In a highball, muddle together your mint leaves and then add your crushed ice. Pour in all the ingredients together and churn (I found it easier to give the cocktail a good mix in a separate glass before pouring over). Garnish with a cinnamon stick and sprig of mint.

It’s a lovely fruity flavoured cocktail, that is just enough for a quick drink rather than a long evening of cocktails (try it instead of a Baileys after dinner). Dead simple to make, and an instant favourite in House of Blog HQ!
