Food of the Month: Lemon

Okay, so I’m going a bit mad with citrus fruits, but the lemon is just on its way out of season, so you had better grab them while they’re still at their best.

I love lemon, especially little lemon cakes and biscuits. But it is the perfect addition to any savoury dish too. Add it with honey to chicken or salmon and it makes the quickest, tastiest meal yet! But this dish is a twist on a Chinese takeaway, and I’ve adapted it for gluten free, so get cooking.

Sticky lemon chicken – serves four

You will need:

  • Frying pan
  • Kettle

Ingredients:

  • 1 tbsp honey
  • Juice 1 lemon
  • 250ml chicken stock (check it for gluten before using)
  • 1 tbsp gluten free soy sauce
  • 4 chicken breasts, cut into chunks
  • 1 tbsp cornflour
  • 1 tsp vegetable oil
  • 2 carrots, finely sliced
  • 1 red pepper, cut into chunks
  • 140g sugar snap peas

How to do it:

In a jug, mix together the honey, lemon, stock and soy, then set aside.

Sticky lemon chicken, Food of the Month, Gluten free, Frying chickenHeat the oil in a non-stick frying pan, then fry the chicken until it changes colour and starts to become crispy.

Add the carrots and red pepper, and fry for another minute.

Sticky lemon chicken, Food of the Month, Gluten free, Sugar snap peas, Carrots, Red pepper, ChickenPour the stock into the pan, bring to a simmer, then add the sugar snap peas and bubble everything together until the chicken is cooked and the vegetables are tender. The sauce should take on a thick, sticky consistency.

Serve with noodles or rice.

Delicious, and much cheaper than a takeaway!
