Cocktail Bar: Sparkling lemon and mint juleps
Today’s cocktail is in honour of this month’s food of the month – the lemon. Firstly, I should apologise for the state of the pictures (not sure what happened with them!) But trust me, it tasted a lot better than it looked. This week, we’re supping a sparkling lemon and mint julep.
You will need:
- Cocktail glasses/flutes
- 85g golden caster sugar
- 4 tbsp lemon juice
- 1 bottle chilled, sparkling wine
- 20g fresh mint
Dissolve the sugar and lemon in a saucepan and simmer for 2 minutes until it makes a syrup. Leave to cool (you can do this well in advance).
Pour the lemon syrup into your glasses and top up with the sparkling wine. Stir quickly, then serve with a sprig of mint (or muddle the mint and add).
Fizzy and fresh, this is a great spring drink!
