If I have a favourite vegetable, it is definitely the asparagus. They are just coming in to their perfect season now, so grab a handful and get cooking. They are perfect accompaniments to every meal, but why not make them the star of the show with asparagus soup, or flavour a pasta dish such as this asparagus and crab linguine recipe. If you feel like baking, try making up some asparagus, ham and chive filo tartlets to impress at a party. But, the best way to cook them? For brunch! Try this extra indulgent twist on egg and soldiers with soft-boiled duck egg with bacon and asparagus soldiers

Soft-boiled duck egg with bacon and asparagus soldiers – serves four

You will need:

  • Saucepan
  • Baking tray

Ingredients:

  • 8 asparagus spears (about 300g), woody ends discarded
  • 4 long thin slices rustic bread (you can pick up gluten free loaves easily – Kelkin do a great multiseed sourdough)
  • 8 rashers smoked streaky bacon or pancetta
  • 4 duck eggs

How to do it:

Heat up your grill to high. Meanwhile, remove the woody ends of the asparagus and slice the bread in to 12 soldiers, a bit shorter than the asparagus.

Take a soldier and spear of asparagus and wrap tightly together with a rasher of bacon. Place on the baking tray and season well.

Grill for around 15 minutes, or until the bacon is crispy.

Whilst that is happening, boil a pan of salted water and simmer the duck eggs for about seven minutes (this should give you a runny yolk).

Serve with the warm soldiers for dipping.

If you can’t get hold of duck eggs (they are a bit harder to find in your local supermarket), chicken eggs work just as well – I chose Bluebell Araucana’s because I love the pastel shells. The trick is to get a runny yolk for dipping though! Brunch is the perfect meal for sharing with friends, so rather than nipping out to the nearest café next time, why not invite everyone over and impress with some asparagus soldiers!
