Cocktail Bar: Lemon Cheesecake

There are all sorts of cocktails; from brunch to dinner parties to posh cocktail bars. Then there are the desserts. And this week, we’re indulging in a creamy, sweet-and-sharp dessert cocktail: the lemon cheesecake

You will need:

  • Cocktail shaker
  • Coupette glass

Ingredients:

  • 35ml vanilla vodka
  • 1 tbsp limoncello
  • 1 tbsp vanilla syrup
  • Pinch lemon zest
  • 1 tbsp natural yoghurt
  • 1 heaped tbsp mascarpone
  • 1 digestive biscuit, crumbled (you can easily get gluten free digestives)

How to make it:

Put all the ingredients, save the biscuit, in a cocktail shaker over ice, and shake well. Strain in to a coupette glass and garnish with the crumbled biscuit. This is an indulgent, creamy cocktail perfect for a dessert, so make sure you enjoy in style (AKA, feet up and a good book)!
