Raspberries, Food of the Month, Berries

Berries are the overwhelming popular summer fruit, and one of the best tasting out there right now are raspberries. The most obvious choice is to whizz them up in a smoothie, or tasty puddings (like this hazelnut and Baileys meringue cake or some warm raspberry cupcakes with orange sugar drizzle). But you can also mix them up for a fruity sauce for an impressive dinner flavour. I’ve picked this delicious raspberry marinated rack of lamb for my inspiration, but added a slight twist to make it a quick and easy weeknight meal…

Raspberry marinated lamb chops – serves two

You will need:

  • Bowl/food processor
  • Non-stick frying pan
  • Saucepan

Ingredients:

  • 175ml vegetable bouillon
  • 150g fresh raspberries
  • 2 tbsp raspberry jam
  • 1 tbsp red wine vinegar
  • 2-4 lamb chops (depending on size)
  • Pinch dried rosemary
  • New potatoes
  • Steamed green vegetables

How to do it:

Using a food processor or bowl with a whisk or knife, blend together the vegetable bouillon, raspberry jam, raspberries and red wine vinegar until smooth. Leave to cool.

Put the lamb chops in the marinade and cover the chops well with the sauce. Cover with cling film and leave to marinade, for at least two hours or more.

In a non-stick frying pan, heat thoroughly and then add the chops until slightly brown. Throw in the rest of the marinade and cook on a high heat as the marinade starts to thicken.

Once cooked through, serve with new potatoes and green vegetables.

If you have time to spare, I definitely recommend using the original recipe with a rack of lamb an giving it the time it deserves, but when you’re in a hurry, these lamb chops are delicious and oh-so easy to make.
