Quinoa and Feta Salad with Roasted Vegetables

It’s my aim in life to find a quick and easy lunch, and so spend my time constantly testing out recipes. This time, it’s packed full of protein, totally veggie, and (of course) naturally gluten free. Pick up some fresh vegetables for roasting, and mix up some quinoa and feta salad with roasted vegetables (this recipe serves four, so adjust as appropriate)…

You will need:

  • Saucepan
  • Roasting tray
  • Chopping board
  • Mixing bowl

Ingredients:

  • 200g quinoa
  • 3 tbsp olive oil
  • 1 red onion, cut into thick round slices
  • 2 peppers – red or yellow are best – cut in to wedges
  • 200g courgettes, cut in to chunks
  • 3 garlic cloves, unpeeled
  • Zest and juice 1 lemon
  • Pinch of sugar
  • Small pack parsley, roughly chopped
  • 200g pack feta cheese

How to make it:

Cook the quinoa (follow the pack instructions carefully if you’ve never tried to cook quinoa before), drain and set aside.

Heat the oven to 180°C fan. Toss the onion and peppers with 1 tbsp of the oil and season, then roast for about 15 minutes.

Toss the courgettes and garlic in with the rest of the veg and roast for another 15 minutes.

In a separate bowl, squeeze the roasted garlic cloves out of their skins and mash. Stir in the remaining oil, lemon juice, zest, sugar and season lightly. Drizzle over the now-cool quinoa and mix in the roasted vegetables and parsley. Crumble over the feta, give it a good mix and serve.

Full of protein, packed full of the good stuff to keep you full to dinner, this is the ideal lunchbox meal. It only lasts a couple of days, so don’t make too much of it. The zesty lemon gives extra depth to the salad, and the vegetables are full of flavour. Delicious!
