Broccoli Lemon Chicken with Cashews

When you’re eating healthy (or “clean”), you find yourself spending most of the time eating chicken and broccoli. So it’s about time to make these two basic ingredients far more interesting. Enter the broccoli lemon chicken with cashews (serves two)…

You will need:

  • Frying pan/wok with a lid
  • Bowl

Ingredients:

  • 1 tbsp sunflower oil
  • 340g pack of mini chicken breast fillets
  • 2 garlic cloves, sliced
  • 200g pack tender stem broccoli
  • 200ml chicken stock
  • 1 tsp cornflour
  • 1 tbsp clear honey
  • Zest of half a lemon and juice of a whole one
  • Handful of roasted cashews
  • Basmati rice/rice noodles to serve

How to make it:

Heat the oil in the pan, and add the chicken. Stir fry until golden (about 4 minutes).

Remove from the pan, then add the garlic and broccoli and fry for about a minute. Cover, a cook for a further two minutes until almost tender.

In a separate bowl, mix together the stock, cornflour and honey, then pour in to the pan and stir until thickened.

Throw the chicken back in to the pan to heat through, then add the lemon juice and zest, and add the cashew nuts. Give it a quick stir and serve with basmati rice or rice noodles.

Much like my favourite beef and broccoli stir fry, this is a staple midweek dinner. Quick and easy, and full of healthy ingredients (I recommend using honey as a more natural sugar over sugar itself!) and instantly makes a boring meal interesting.
