Summer is drawing to a close, and that means autumnal fruits are starting to come in to season. One of the first, which is the perfect bridge between summer and autumn, are blackberries. Most of the time, you can throw blackberries in with most sweet treats and get the perfect result: try blackberry and honey fool, or add to a tart with apples. It’s delicious with rich meats, like game birds, so try roast wild duck with blackberry sauce and celeriac purée, and makes the perfect sloe gin (start making It now in time for those autumnal evenings). Poached figs with blackberries in red wine – serves 4-8

You will need:

  • Food processor
  • Saucepan
  • Glass bowl
  • Fine sieve
  • Spoon

Ingredients:

  • 675g ready to eat blackberries
  • Juice of 2 lemons
  • Juice of 1 orange
  • 175g caster sugar
  • 1 bottle red wine
  • 16 firm, fresh figs
  • 85ml crème de mure or crème de cassis
  • 1 tbsp freshly chopped mint
  • Mascarpone cheese to serve

How to make it:

In a food processor, blend together the blackberries, lemon and orange juice. Strain the purée through the sieve in to the saucepan (make sure there are no pips left).

Add the sugar and red wine and place over a medium heat until it boils. Once boiling, simmer gently until the sugar dissolves and skim off any scum from the top with the spoon.

Once the sugar is gone, add the figs and poach for 5-6 minutes, depending on ripeness.  Once cooked, pop in a glass bowl to cool.

Increase the heat of the sauce and reduce until there’s around 450ml left. Cool, add the crème de mure/cassis and mint and pour over the figs. Cover and chill overnight.

Serve with a healthy dollop of mascarpone.
