September has arrived. Which means cold mornings, darker evenings, and rain. But this month’s food is sure to bring you some comfort. Blueberries are coming to the end of their season now, so grab them quick. You’re going to want several punnets-worth for all the tasty recipes! Try some traditional blueberry muffins, or a non-traditional blueberry muffin martini. For a savoury option, pick up duck breasts to serve with blueberry sauce, or pick some simple recipes, such as blueberry buttermilk sherbet or jam. But for me, blueberries are best served up in sweet dishes or smoothies. This time, I’m picking a total comfort food…

Blueberry and banana pancakes – makes 8 pancakes

You will need:

  • Whisk
  • Jug
  • Non-stick pan

Ingredients:

  • 200g gluten free self-raising flour
  • 2 eggs
  • 500ml milk
  • 1 tbsp oil
  • As much chopped banana and blueberries as you want

How to make it:

Put the flour into a mixing bowl and add the eggs. Whisk in some of the milk until smooth, then gradually add the rest until you get a thin batter.

Lightly oil a frying pan and heat through. To check it’s hot enough, put a tablespoon of batter in to the pan and roll it around to cover the surface – it should give you even coverage without sticking.

To make the pancake, add enough batter to create a smooth layer over the pan. Leave it to cook halfway, so it’s still liquid but is starting to firm up on the bottom. Drop in as much of the chopped banana and blueberries as you want.

Cook all the way through, flipping every now and then until it’s golden on both sides. Serve with more blueberries, some maple syrup and – if you’re feeling really posh – Greek yoghurt.

 Blueberries are a delicious treat to hang on to the summer, and pancakes are one of the ultimate comfort foods. If you time it right, you’ll get a burst of flavour each time you bite in to a blueberry. Bliss.
