It’s time for something fresh and exciting for January. No more turkey! That’s why I’ve picked a bright, fresh fruit for this month’s food of the month – the passionfruit. I love this sharp-yet-sweet fruit. It’s not in season all year round, but it’s mid-season right now, so the perfect addition to brighten the January table. Understandably, it’s best as a sweet treat, but for something a little different, try this roast pork recipe for a unique twist, and a great cocktail is the zombie if you want to impress. But for me, it’s got to be the sweet treats. Rustle up a passionfruit and chocolate tart to indulge your sweet tooth, or go for the more classic style: a passionfruit and white chocolate cheesecake. I’ve changed up some of the quantities a bit after some practices, and I use passionfruit coulis instead of the juice…

Passionfruit and white chocolate cheesecake

You will need:

  • Loose-bottom flat tin
  • Saucepan

Ingredients:

  • 200g of gluten free digestive biscuits, crushed
  • 100g of butter, melted
  • 100g of white chocolate chips
  • 1 bronze gelatine leaf, soaked in water
  • 340ml of double cream
  • 180g of full fat soft cheese
  • 100ml of passionfruit coulis
  • ½ bronze gelatine leaf, soaked in water

How to make it:

Bash up the biscuits in to crumbs, and then combine with the melted butter and press in to the base of your tin. Set in the fridge.

Warm 120ml of the double cream with the white chocolate chips until melted, and add the drained gelatine.

Mix the soft cheese with the remaining cream until smooth and then add to the chocolate mixture. Pour over the biscuit base and put back in the fridge until set.

For the topping, mix the gelatine leaf in to the coulis and pour over the top of the cheesecake, leave in the fridge to set.
