Mindful Chef: Ginger and Spring Onion Sea Bass with Miso and Lime Quinoa

I promised you last week that there would be more blog posts about Mindful Chef, and I never go back on a promise. This week, I want to talk about one of the recipes they very kindly sent me to try out.

Well, this is their ginger and spring onion sea bass with miso and lime quinoa. Basically, the perfect Spring dish. I love sea bass – it’s fresh and light, and the ingredients add an Asian-style kick. The joy of Mindful Chef is that you don’t even need to do the measuring, just follow the instructions on the recipe card and voila.

How to make it:

Cook up the quinoa. I’ll admit, I’ve never been good at quinoa, but for some reason this worked (it might help that I measured out the water correctly this time), and it turned out fluffy and perfect. You can cook this while making the rest of the dish, as everything is timed to be ready pretty much at once.

In a frying pan, fry up the bok choi and yellow pepper until the bok choi has wilted and the yellow pepper is cooked through. Once this is done, set aside and keep warm (don’t put in the oven – place on a warm plate and cover with another) and fry the sea bass – this is dead simple because it cooks so quickly, but you do need to keep an eye on it because it may burn. Add to the bok choi and yellow pepper to keep warm.

The final bit of frying is saved for the ginger, chili and tamari – and basically the smells from this will make you so hungry you could cry. Make sure you turn down the temperature on this one otherwise the tamari will burn – just gently simmer.

Once this is all done, drain the quinoa. Mix the miso paste and lime juice in to the quinoa for the final part then put together, spooning over the ginger and chilli sauce.

I couldn’t decide if my favourite thing about this was the quinoa (I’m definitely making this again for all of my meals) or the sea bass, which was cooked to perfection. I’m not usually a fan of such strong ginger and chilli flavouring, but there was something about the heat of it that made it perfect. The coolness of the quinoa and fish compared with the heat of the ginger and chilli and then all tempered by the peppers and bok choi. The balance is absolutely spot on.

The best thing about this, apart from it being totally gluten free? How healthy it is. No added sugar, no unhealthy fats, just clean, fresh ingredients and a meal that definitely tastes better than junk food. You don’t even get the heavy, bloated feeling from eating too much (I could definitely go for seconds).
