Gluten Free Blueberry Pancakes

I love an over-indulgent breakfast like most people. But half the time I miss out because it’s full of gluten. Dove’s Farm to the rescue! This means I get a brunch to die for without any of those pesky dietary problems. Time to try blueberry pancakes…

Blueberry pancakes – makes around 8

Ingredients:

  • 125g gluten free self-raising flour
  • 1 tsp Bicarbonate of Soda
  • 2 eggs
  • 150g milk
  • 25g melted butter
  • 100g blueberries
  • 1 tbsp oil
  • Maple syrup to serve

How to make it:

In a jug, mix the flour and soda, then beat in the milk and egg. Melt the butter (a few seconds in a microwave will do) and stir in to the batter.

Add the berries and stir again to get them evenly distributed.

In a frying pan, heat the oil until almost smoking and roll around to coat the pan well.

Pour the batter in to the pan over a medium heat. To get 8 pancakes, the circles should be around 3 inches, but you can just make them bigger.

When bubbles start to appear on the surface, it will be about ready to turn over. Cook on both sides until golden and serve immediately with maple syrup. If you want to go a step further, chop up some strawberries or bananas.
