Food of the Month: Strawberries

Summer time is back. It might be brief, and you will never know what footwear is appropriate for the weather, but it is back. So what’s my top pick to eat this month? Well, it’s a British summertime staple – from Wimbledon to picnics and barbecues, Pimms to dinner. It’s the strawberry. Strawberries are best when they’re super fresh and bright red; pick up a punnet to eat just on their own, or add a dash of sugar and cream for a real British experience. Everyone loves strawberries in different ways, so I’m not even going to suggest the best way to eat them. Instead, I’m just going to share one of my favourite summer desserts

White chocolate and strawberry mousse – makes 4-6

You will need:

  • Blender
  • Sieve
  • Heatproof bowl
  • Bowls
  • Saucepan
  • Wooden spoon
  • Whisk

Ingredients:

  • 750g strawberries, with extra to serve
  • 2 tbsp lemon juice
  • 225g grated white chocolate
  • 7g powdered gelatine
  • 450ml double cream
  • 30g icing sugar, with extra for dusting
  • Biscotti (optional)
  • Sprigs fresh mint (optional)

How to make it:

Add half the strawberries to the blender and purée until smooth. Sieve the purée in to a clean bowl and add the lemon juice. Slice the remaining strawberries and add to the bowl.

In the heatproof bowl, melt the white chocolate over a saucepan half-filled with boiling water. In the meantime, rest the gelatine in around 50ml of water for about 5 minutes. In a pan, simmer a quarter of the cream and the icing sugar until the sugar is dissolved and the cream is warm. Add the gelatine and stir until dissolved (about 5 minutes).

Add the cream mix in to the melted chocolate, and stir until smooth. Add three quarters of the strawberry purée.

Whisk the remaining cream in to soft peaks and fold in to the chocolate and strawberry mix. Serve in to small glasses (or whatever you’re serving the mousse in) and leave to chill overnight – although if you’re short on time, around 2 hours will do.

When it’s ready to be served, spoon some of the remaining purée on to each serving, and garnish with strawberries, icing sugar, and mint. Serve with biscotti.
